Water temperatures drop, wash and rinse cycle effectiveness decreases, energy consumption rises, and chemical usage increases. In the UK, commercial kitchens are required to maintain equipment in a condition that supports proper food hygiene practices under the Food Safety Act 1990 and associated regulations. A poorly maintained dishwasher that fails to achieve adequate wash temperatures or rinse temperatures is a food safety risk.

Recommended service intervals depend on the intensity of use:

  • High-volume sites (hotels, airports, motorway services) — quarterly service visits
  • Medium-volume sites (restaurants, casual dining) — bi-annual service visits

Descaling: A Critical Maintenance Requirement

Hard water scale is one of the most damaging issues for commercial dishwashers, particularly in the hard water areas of southern and eastern England. Limescale builds up on heating elements, in pump housings, on spray arms, and throughout the water circuit. If not addressed, scale deposits:

  • Dramatically reduce heating efficiency — causing wash and rinse temperatures to fall below safe levels
  • Increase energy consumption as the machine works harder to compensate
  • Block spray arm nozzles — reducing wash coverage and effectiveness
  • Damage pump seals and impellers over time
  • Ultimately cause catastrophic heating element failure

Common Meiko Dishwasher Faults

  • Poor wash results — usually caused by blocked spray arms, low detergent dosing, insufficient water temperature, or scale build-up. The fix depends on the root cause but often involves a combination of descaling, spray arm cleaning, and dosing system calibration.
  • Poor rinse results (spotting and streaking) — typically caused by low rinse water temperature, incorrect rinse aid dosing, or hard water. Rinse temperature should reach at least 85°C for effective sanitisation.
  • Pump faults — wash and drain pumps can develop faults from wear, scale damage, or foreign body ingestion. Pump faults typically present as poor water pressure, incomplete draining, or unusual noise.
  • Heating element failure — often caused by scale build-up on the element. Element replacement is a straightforward repair but requires the machine to be drained and cooled.
  • Chemical dosing faults — the detergent and rinse aid dosing system must be calibrated correctly for effective washing. Dosing faults result in either poor wash performance or excessive chemical consumption.
  • Door seal deterioration — door seals wear over time and can cause leaks and heat loss. Seal replacement is a routine maintenance task.
  • Control system faults — modern Meiko machines have sophisticated electronic controls that can develop faults requiring specialist diagnostic equipment to identify and resolve.
