How to Choose the Right Commercial Fryer for Your Restaurant or QSR

A commercial fryer is one of the most heavily used pieces of equipment in any fast food or restaurant kitchen. Get the right one and it will run quietly and efficiently for years. Get the wrong one and you'll be battling inconsistent oil temperatures, excessive downtime, and spiralling energy bills.

Here's a practical guide from our engineers — who between them have serviced thousands of commercial fryers across England and Wales — on what to look for when choosing a commercial fryer.

Step 1: Work Out Your Required Output

The most important starting point is understanding your peak demand. How many portions of fried food do you need to produce per hour during your busiest period?

As a rough guide:

  • Small café or food truck: 6-8 litre single tank countertop fryer
  • Independent restaurant: 10-14 litre single or twin-tank floor fryer
  • Busy pub kitchen: Twin-tank floor fryer, 14-22 litres per tank
  • QSR or fast food chain: High-volume tube-style fryers (Pitco, Frymaster) with built-in filtration
  • Large hotel or motorway services: Multiple high-capacity fryers with automated oil management

Step 2: Gas or Electric?

This is often determined by your existing kitchen infrastructure, but there are real performance differences to be aware of.

Gas Fryers

  • Heat up faster — typically ready in 7-12 minutes
  • Lower running costs in most commercial settings
  • Better performance for high-volume continuous frying
  • Require Gas Safe registered engineers for installation and servicing

Electric Fryers

  • Easier to install — no gas supply needed
  • More precise temperature control
  • Generally lower purchase price
  • Higher running costs at scale
  • Good option for smaller operations or where gas is unavailable

Step 3: Consider Oil Management

Oil is one of the biggest ongoing costs for any frying operation. Poor oil management doesn't just cost money — it affects food quality and safety. Look for fryers with:

  • Built-in filtration systems — extend oil life significantly and improve consistency
  • Cold zone design — a cool area below the heating elements traps food particles and slows oil degradation
  • Melt cycles — for solid shortening operations, a slow melt cycle prevents damage to elements
  • Automated top-up systems — available on high-end models, these maintain consistent oil levels automatically

Step 4: Think About Maintenance Before You Buy

A fryer is only as good as its maintenance programme. Before purchasing, consider:

Gas Safety — Don't Overlook This

Any gas fryer in a commercial kitchen must be installed and commissioned by a Gas Safe registered engineer. Annual gas safety checks are a legal requirement, and your gas fryer must be included in your annual service programme.
